How to Sous Vide Pork Blade Chops

Blade chops are among the toughest of the pork chops, so they usually need extended sous vide times for 8 to 12 hours. For a chop-like texture, the temperature to use depends on your personal preferences: 135°F (57.2°C) for medium-rare, 140°F (60°C) for medium, and 145°F (62.8°C) for well done blade chops. You can also use braise-like temperatures if desired.

What is the Best Sous Vide Blade Chops Temperatures and Times?

Blade chops are among the toughest of the pork chops, so they usually need extended sous vide times for 8 to 12 hours. I usually do 140°F (60°C) but some people like it higher at 145°F (62.8°C).

  • Medium-Rare: 135°F for 8 to 12 Hours (57.2ºC)

  • Well Done: 145°F for 8 to 12 Hours (62.8ºC)
