Today you can find bison on the menu in a lot more restaurants. However, it is still an under-utilized cut of meat for both restaurant and home cooking.

I recommend sous vide cooking bison for a very tender red meat treat. It's easy to do and a 1.5 to 2 pound bison strip steak only takes between 2 to 4 hours to sous vide. You can also substitute either elk or deer meat if you prefer.
