Sous Vide Escargot

In the Sous Vide Recipes Forum
Has anyone ever done escargot sous vide?

I have having a dinner party tomorrow night and I have a can of snails that I have been wanting to use.

Any ideas?

I know they do it in Modernist Cuisine and some people say it's the best way to prepare them. Unfortunately I can't find any time / temp recommendations. Sorry.
A recipe from a restaurant that serves snails with pork trotters cooks them for 3 hours at 68C/155F. Seems a little high in temp and short on time for most meats, but I'm sure they get good results.
