Using Spherification Molds

In the Modernist Recipes Forum
I was interested in doing the Spherified Mango Ravioli recipe. I noticed you called out spherical or hemispherical molds in the Tools list. I can see how the spherical molds will give you nice spheres. But it seem like the hemispherical ones would have a flat side. Is that correct?

Actually, both of the molds result in the creation of spheres. However, the spherical molds are a little fuller than the hemispherical ones.

A good analogy is if you filled up a water balloon while it was sitting on the counter. It will have one flat side at that point. As soon as you lift it up though it will become round. The modernist spheres work the same way.
