The PolyScience Sous Vide Professional Classic is a commercial immersion circulator. PolyScience calls this, "The legendary machine that changed kitchens forever". This is because it is the immersion circulator that helped pioneer the realm of sous vide cooking. It was developed to meet the rigorous requirements of commercial food establishments. It can handle water baths up to 30 liters in size. The powerful 12 L/minute pump keeps the water circulating and the temperature consistent throughout the bath. The 1100 Watt heater maintains a water temperature stability of 0.1°F.

The circulator has an LCD display which shows either the target or actual temperature. It has three buttons that you can program with temperatures you use frequently. There is a switch on the back which allows you to select either a Low or High speed for the circulating pump.

As soon you pick this circulator up, you can tell from the "feel" that it was designed for the precision and reliability required in the commercial environment. All of the submerged parts are high-grade stainless steel to ensure lasting, trouble-free performance.
