When you are just getting started with modernist cooking purchasing a complete kit can be the way to go. These kits typically contain relatively small quantities of some of the more popular ingredients.
Some molecular gastronomy kits also include a variety of simple tools you can use to create many modernist dishes. In fact, several only have tools in them.
We have teamed up with Modernist Pantry to create two excellent kits to get you started in modernist cooking. There's the Basic Modernist Cooking Made Easy Kit which includes an ample supply of 8 ingredients, a 30 ml spherification syringe, a stainless steel caviar strainer, a 3-pack of antistatic weighing dishes and a copy of our book Modernist Cooking Made Easy: Getting Started. The Premium Kit includes everything in the Basic Kit plus an additional 10 ingredients and a high precision digital ingredient scale. Obviously we're bias, but we feel strongly that either of these kits will quickly get you on the road to molecular gastronomy.
For a nice assortment of ingredients the Artistre Experimental Kit fits the bill. It doesn't come with any tools but has a wider variety and quantity of ingredients: approximately 50 grams of 12 different Artistre products.
There is also the Cuisine R-Evolution Kit from Molecular-R (above) since it was given to me as a gift by my parents after I expressed interest in modernist cooking. It comes with several molecular tools including a plastic syringe and tubing, 2 pipettes, a slotted spoon, a set of measuring spoons as well as 5 pre-measured molecular gastronomy ingredients. It also includes a DVD showing 50 recipes being made. This was a great way to get started and I recommend it for the beginner.
In addition to the "getting started" type listed above there are a variety of other kits designed for specific molecular gastronomy dishes. The Molecular Gastronomy Artistre Spherification Starter Kit with tools is all you need to do spherification. The kit includes 3 ingredients, a syringe, a fine-tipped bottle and nice size slotted spoon.
