The Oliso is a uniquely shaped edge-style vacuum sealer.
The Oliso has a smaller size than many sealers and is easy to use. You can re-use the bags, which is nice if you have are trying to minimize waste. It has a "dry" and "moist" setting which makes it easier to seal damp or fragile foods.
You have to use the Oliso bags, which are more expensive than many generic FoodSaver-style bags. This cost can be offset if you reuse the bags, though I generally don't have the patience for that. Also, like all edge-style sealers, the Oliso cannot get a good vacuum if there is liquid in the bag.
I have used multiple sealers over the years, including Ziploc Freezer Bags and several FoodSaver edge-type sealers. Once I got into testing the Oliso I used it almost exclusively for several months for all my sealing needs. I've also heard from other sous vide cooks and chefs that I respect who regularly use it. If you are doing a lot of general food storage, or if you don't mind cleaning bags after you use them, I think the Oliso is a great little machine and was a joy to use.
However, if you only use it for sous vide, and don't like to clean bags afterwards or aren't concerned about generating plastic waste, then it might not be worth it for you due to the high cost of replacement bags.
