While for normal household use I prefer the Cambro 12 quart container, this one is exceptional for large quantities of food. It can hold 27 quarts of liquid, almost 7 gallons, and easily fits several racks of ribs, many pork shoulders or several pounds of steaks.
It's also transparent, which makes it easy to look at the food and ensure that it is staying under water and not leaking.
Polycarbonate has several advantages. It holds in heat much better than metal pots and they are also lightweight but heavy duty. Polycarbonate is also designed to hold up to high temperatures, which means there is no warping or leakage of potentially dangerous chemicals into the water.
It also has a lid that is easy to cut a hole in to fit the circulator, reducing the evaporation.
The only real downside is that it can be a little unwieldy to store, since it is so big. I had plenty of storage space in Connecticut, but now that I'm in a small apartment in New York City I couldn't hold on to it.
Some circulators also have trouble heating this much water, so wrapping towels around it and using a lid is often crucial for even heating.
For a dedicated sous vide container, we really like all of the polycarbonate options, but Cambro makes a great product and this size works for any large cooks you need. I used this container for several years until space considerations in New York City forced me to get rid of it.
