The iSi 1-quart gourmet siphon is made of heavy duty stainless steel. It also has a silicon gasket so it can be heated or chilled for a variety of uses. It is a big enough size for cooking for parties or making large quantities of items like foamed soups or sauces. Cleaning the siphon is made easier by being able to disassemble it some, and a decent set of cleaning tools are included. It handles N2O for foaming and CO2 for carbonating.
This whipping siphon has many different tips for shaping foams and there are several different accessories sold separately that work with it. iSi is also the leader in whipping siphons and they make wonderful, long lasting products that perform great, even in restaurant kitchens.

The iSi is the most expensive siphon out there, but you do get what you are paying for. It would also be nice if the tip that came included with the siphon was stainless steel instead of plastic.
I have used both a 1-pint and 1-quart siphon for years and never had any issues. They are also what most professional kitchens use due to their durability. If you can afford to spend a little more on your whipping siphon then you can't go wrong with the iSi 1-pint or iSi 1-quart. If price is more of a concern, then you can look at the Masa brand which is about $50 less expensive.
