Followed your book to make salad dressing spheres via Reverse, both prefrozen and spooned. Great success. Spoon was easiest.
Query: can alginate bath be re-used later on? How long is it good for, if refrigerated?

Hi John, glad the spherification worked well! I'm not really sure how long an alginate bath can be re-used for. I don't see any issues with saving it in the refrigerator for a few days, just make sure it doesn't develop a smell or off taste.
P.S. and you can just call me Jason, no need for the "chef" part. I'm just a home cook and I have too much respect for what real chefs do on a daily basis to use that term to apply to myself.
