Magnetic Stirring Device

I am sure everyone knows already, but using a magnetic stirring device with temperate probe is very helpful for dispersment and hydration of these powders.

It takes some time for some ingredients. For example, sodium caseinate will disperse without shearing it, at either cold or boiling temp, but you need to give it a lot of time. It takes about 2 hours to disperse a 2.5 - 5.0 % caseinate in water with about a 500 RPM circulation. Then you can add other ingredients like gelatin.

I don't like using immersion or standing blenders for initial mixes of gums and powders because too many times, they foam when you try to use a shear force. Instead, I think it is better to use time and gentle stirring, via magnetic stirring device.
