if i wanted to do soy sauce pearls, could i use the recipe for the balsamic pearls and swap the vinegar for soy sauce?

Yup, I believe that would work just fine. Remember that soy sauce has a pretty strong flavor so depending on your preparation you might want to water it down some (water, orange juice, etc) or sweeten it (honey, sugar, etc). Let us know how it works out!
