How to Sous Vide Asparagus

There is a wide range of timing to sous vide asparagus, because there are so many different sizes. Small, pencil asparagus might be tenderized in as little as 10 to 20 minutes. The larger and thicker asparagus can take upwards of 30 to 45 minutes. Both types are almost always cooked at 183°F to 185°F (83.9°C to 85°C).

I especially like using sous vide on the thicker asparagus, since the lower temperature allows it to cook through without overcooking the outsides.
