How to Sous Vide Acorn Squash

Sous vide acorn squash is best when cooked for 1 to 2 hours at 183°F to 185°F (83.9°C to 85°C). I usually cut it into 1/2" to 1" cubes before sous viding it and place it in a single layer in the pouch. If you are going to puree it then a longer cooking time will render it even more tender.
