How to Sous Vide Pork Blade Chops
Blade chops are among the toughest of the pork chops, so they usually need extended sous vide times for 8 to 12 hours. For a chop-like texture, the temperature to use depends on your personal preferences: 135°F (57.2°C) for medium-rare, 140°F (60°C) for medium, and 145°F (62.8°C) for well done blade chops. You can also use braise-like temperatures if desired.
I have some more time and temperatures listed below, but I highly recommend reading my how to sous vide pork chops guide for more information.
