Lamb shank becomes incredibly tender when cooked at 131°F (55°C) for medium-rare or at 140°F (60°C) for medium doneness. Regardless of how you like your lamb cooked, the length of time will still be 1 to 2 days.
Depending on which of the more traditional-type results you favor, you can cook them at any of the braise-like temperatures listed below.
