How to Sous Vide Pork Sirloin Roast

Pork sirloin roast is tender when cooked to either medium-rare 135°F (57.2°C) or medium 140°F (60°C). Many people prefer pork well done, if you fall into this category then I suggest trying 145°F (62.8°C) for your temperature. At any of these temperatures, your sirloin roast will have a chop-like texture in 6 to 12 hours when the meat is heated through and tenderized slightly.
