Sous Vide Butter-Poached Potato Spheres Recipe

Sous Vide Butter-Poached Potato Spheres Recipe

  • Serves: 4

Ingredients for Sous Vide Butter-Poached Potato Spheres

    2 Russet Potatoes, peeled (peels reserved for Crispy Potato Skins garnish)
  • 20g Butter, unsalted
  • 1g Kosher salt

Cooking Instructions for Sous Vide Butter-Poached Potato Spheres

1. Cut the short side of the potato to expose a flat face. Using a 3/4 inch melon baller,

scoop a sphere from the potato.

2. Do not store in water. Work quickly.

3. Make another cut just below the scoop to make a new flat face. Repeat the process

as many times as possible. Depending on the size of the potatoes, some faces may

yield 2-3 spheres.

4. Reserve the scrap

for the potato soup.

5. Combine the spheres, butter, and salt in a vacuum bag.

6. Cook sous vide at 90°C for 30 minutes.

7. Chill completely. Reserve.
