I was able to spend quite a bit of time with a Mellow that was provided to me by the company for free. This allowed me to run some objective tests on the unit and also to cook numerous items as well. Below is a summary of my thoughts, but for a much more detailed look you can read my Detailed Mellow Review.
The Mellow's distinguishing characteristic is its ability to chill food and hold it at low temperatures. If you are regularly delaying cooks, then this feature is amazing.
The Mellow is sturdy and seems to be of high quality. It heats relatively quickly and has a bubbler to circulate the water. The app is easy to use and works well. The water bath tank is also very easy to clean.
The two main negatives are the price and the tank size.
At $400, the Mellow is 3 to 4 times more expensive than the immersion circulators we recommend such as the Joule or Anova. Unless you really need to delay cooks often, that extra price is hard to justify.
The water bath container is on the small side, only 5 liters, which makes it impossible to cook larger amounts of food. If you have a smaller family then this might not be a big deal. Conversely, the unit itself is very large, so it will most likely remain on your countertop at all times.
The Mellow is also very loud. If it is near an area you usually hang out or work in, it can be very distracting.
We recommend the Mellow as one of our "Recommended" sous vide machines because if you often delay cooks, then the chilling feature makes it super easy to use and the extra cost will most likely be justified. It's also stylish and a good conversation starter.
Though we didn't make it a "Top Pick" because if you are just looking for a standard sous vide machine then we think you'd be better off buying a Joule or Anova and spending the extra $200 to $300 on some good steaks! Or even purchasing a second machine to do multiple items!
