Sous Vide Lollipop Chicken Drums with Whiskey BBQ Sauce Recipe

Ingredients for Sous Vide Lollipop Chicken Drums with Whiskey BBQ Sauce

  • For the Chicken

  • 6 chicken drumstick lollipops
  • BBQ seasoning of your choice
  • For the Whiskey BBQ Sauce

  • 1 1/2 cups ketchup
  • 1 cup whiskey
  • 1/4 cup dark brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons liquid smoke
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder and onion powder or BBQ rub
  • To Finish

  • Sous vide and chilled chicken
  • Whiskey BBQ Sauce

Cooking Instructions for Sous Vide Lollipop Chicken Drums with Whiskey BBQ Sauce

For the Chicken

Prepare water bath for sous vide cooking to 148F. Set timer for 3 hours. Season lollipop drumsticks with BBQ seasoning; arrange in single layer in vacuum seal bag; seal. Sous vide chicken for 3 hours. Immediately place sealed chicken in 50/50 ice water bath; let chill for 15 minutes. Remove chicken from bags; pat dry with paper towels.

For the Whiskey BBQ Sauce

While chicken is in immersion circulator prepare sauce. Combine all the ingredients in a small pot over medium-high heat; bring to a boil. Reduce heat and gently simmer, uncovered, for 15 minutes or until the sauce reduces to about 1 3/4 cups.

To Finish

Heat grill to medium. Dip chicken in BBQ sauce and place on grill. Cook for about 10 minutes or until heated through and glazed. Watch carefully so the sauce doesn't burn.
