The biggest benefit to the Sous Vide Professional is that it is built for the professional kitchen environment and it is designed to be run 24 hours a day for years. It also heats very quickly and has extremely low temperature variance. With an 1,100 watt heater it can run handle baths up to 8 gallons (30 liters). PolyScience has been designing sous vide equipment, and working with professional kitchens, for years and has the expertise to help chefs get set up.
The biggest negative is the price, but for a piece of professional equipment it is worth it. It also doesn't have many of the consumer bells and whistles, lacking Bluetooth or WiFi support, though in professional kitchens this is generally not needed.
