Sous Vide Navy Beans Recipe

Sous Vide Navy Beans Recipe

  • Serves: 2

Ingredients for Sous Vide Navy Beans

    225g Dried navy beans
  • 675g Water, for soaking
  • Salt, 1% to weight of cooking water

Cooking Instructions for Sous Vide Navy Beans

1. Rinse and wash the beans. Soak them overnight in cool water at room temp.

2. Drain and weigh the beans and multiply by 1.5. This is the cooking water weight.

3. Add 1% of the weight to the water in salt. Whisk to dissolve.

4. Bag the soaked beans with the salt water and cook sous vide at 90°C for 3.5 - 4 hours. 5. After cooking, cool them completely in their cooking liquid. Reserve in the fridge. Drain thoroughly before using. Do not rinse.
